Cranberry Apple Cake
This turned out really good, it's not sweet though. You can make it sweeter by adding a little honey to the fruit while you're cooking it.
1 pkg fresh cranberries
1 large apple (I've used Cameo and Granny Smith)
Core and chop the apple and cook it with the cranberries in a little water with about 1/2 cup sugar or honey. When all the berries have popped it's done enough. Let it cool.
Cream together:
1/2 cup butter
3/4 cup dark brown sugar
When that is creamy add 2 eggs and stir till smooth. (You can add a couple of teaspoons of real vanilla if you want.)
Sift together:
1 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp cinnamon
Stir that into the butter mixture, then fold in the fruit. Dump it into a greased baking pan (I use an 8 in square Pyrex pan) and bake at 300º for about 45 min. The toothpick test determines doneness.
Serve with a little whipped cream, ice cream or whatever.
