From _The Highlander's Cookbook: Recipes from Scotland_, Sheila MacNiven Cameron, Gramercy Publishing Co, MCMLXVI - really neat little book!

Lemon Curd

Melt in top of double boiler: 1/2 cup butter

Add:
2 tsp grated lemon rind
1/2 cup lemon juice
1 1/2 cups sugar
Stir until sugar is dissolved.

Beat together, then blend in:
4 whole eggs
2 egg yolks

Cook, stirring constantly until quite thick. Cool and refrigerate. Enough for 1 good-sized lemon pie. ;oP
