Hooters (aka Texas Hooters)

Everyone loves my hooters.

Here's the recipe, given to me by Colleen Smith, paralegal par excellence, psychic, and former resident of the Great State of Texas (I think she lives in NC now). Everyone loved Colleen's Hooters. Now they are mine (lost touch with Colleen, but still remember her fondly, and I add the chipotle).

Double or triple the recipe, you'll need to:

1 8 oz package cream cheese
1 8 oz container sour cream
1 8 oz package of hot jalapeno jack cheese, grated
several tablespoons hot sauce (I like the adobo sauce from a can of chipotles with adobo, but any good hot sauce will work).

Whiz the above around in a food processor.

Take a bunch of flour tortillas. Spread the hooter mix on the tortillas. Roll up, jellyroll fashion. Spoon a bit more hooter mix into the ends, they will need it. Refrigerate about 1/2 hour until firm. Slice into sushi like slices. Serve with salsa. Betcha can't eat just one.
