Meat Loaf with Veggies
4 cups shredded Cabbage
1/2 cup chopped Onion
1 1/2 Tbl. Oil
1 cup shredded Carrot
2 cloves Garlic, minced
1 large chopped Green Pepper
1/2 lb. Ground Beef
1 Egg
1 Egg White
1/3 cup Bread Crumbs
1 tsp. Basil
1/4 tsp. Salt
1/4 tsp. Pepper
1/4 tsp. Oregano
1/4 cup Water
2 Tbl. Vinegar
1 cup shredded Potato
Saute cabbage and onion in oil in a large skillet until cabbage begins to turn golden, about 10 minutes. Stir in carrot, bellpepper and garlic, saute 5 minutes more. Cool to room temp.
Combine beef, egg, egg white, bread crumbs, seasonings, water and vinegar in a large bowl. Mix in cooked veggies and potatoes. Shape into a loaf and put into a loaf pan.
Bake at 350 degrees with a foil cover; remove foil and drain; then continue baking without foil for 30 minutes more. Let stand 15 minutes.
