A friend of the family made this pie and it was wonderful. If you watch for butterfat in your crust and chips, it is vegan too.
Nick's Chocolate Fudge Pie
Put 1 bag (12 oz) of Chocolate chips in a bowl and melt in the microwave, they need to be pourable when melted.
Pour in to a blender or food processor and add 1 12 oz block of silken firm tofu and a splash of vanilla extract (or the extract or liqeur of your choice) Blend untill fully mixed and smooth.
Pour in to a 8" graham cracker crust, and chill to set.
Serves 12
Goes great with Tea or coffee, and is delicious topped with whipped cream (or a non-dairy topping?)
