Baba Ganoush

Broil a couple eggplants until they're really black. When they're cool, puree the pulp in a food processor with about a couple tbs. of tahina (sesame paste), a couple peeled garlic cloves (or less), some lemon juice, and salt.

Hummus

Do the same with a couple cups of cooked chickpeas but up the tahina to about a quarter of a cup and enough chickpea liquid to make a paste.
